Best Roast Dinner Ever?

Best Roast Dinner Ever?

Dear Gardening
Yes it’s cold this morning, very cold, but I noticed yesterday that the phone began to ring again and we sold lots of Tim’s Best Potting mix.

I had a customer asking about plants they could grow in hanging baskets where it gets afternoon sun and I instantly thought how fabulous our Big Red Geraniums are growing in exactly that aspect.

“Oh Geraniums, they are so old fashioned”. But are they? I think they might have come back into fashion. “Big Red” just seems to never stop flowering and I just love red flowers, this red in particular.

We’ve grown them using Tim’s Best Potting mix and we’ve planted Crystal Palace Lobelia in the same basket. The red and the blue pop.

Most gardeners struggle to grow plants in hanging baskets because they dry out so quickly hanging up high in the wind. Have a look around your patio, you just might find an empty basket where a plant once lived.

Geraniums are amazing flowering plants, if they ever get tired prune them back, prune 25% of the roots and put them back in the same basket with fresh Tim’s Best potting mix. You’ll be amazed how quickly they come back into flower with fresh new growth.
Spring is coming, I can smell it.

Drove past the Farrow Road Carpark yesterday and I had a wave of love for Campbelltown Council. For a start the building looks beautiful, its art, the Architects have made a carpark look good.

And then they haven’t built it right to the boundary, they’ve left room to plant native grasses and trees around the building so it’s going to look even better in years to come, as the trees grow.

They’ve used native grasses on the nature strip, yes the council has made themselves a verge garden. So there’s no mowing and expensive up keep.

Inside the carpark is a tropical atrium, yes they have left room inside the building for more foliage. Who ever designed this carpark should win an environmental award. Yes I know I’m getting excited about a carpark.

But isn’t it nice to see Campbelltown Council building something that looks green. This is how all buildings should look. Apartments too. Art and Foliage, Campbelltown is waking up.

I’m growing the biggest Silverbeet ever. I’m hiding it in some of my meals for the family. It goes great in Lasagna. I just slip a whole leaf into the layers. It makes Lasagna taste so much better.

I also take it to work and make Gozlemes. It’s so easy to make using Lebanese bread. Simply cut up the Silverbeet and put a couple of handfuls in the flat bread with Fetta cheese and Lemon juice. Fold it over in half then toast in the sandwich maker. It’s to die for and so healthy too.

What recipes have you got for Silverbeet?

My Silverbeet has grown so big because I dug Tim’s Cow manure into my soil and Chicken manure. With a dressing of Tim’s FAST FOOD it’s make everything grow so big.

I’m cooking something delicious tonight. I bought a Rolled Pork Roast last night for around $17.00. It might have been on special. I’ve cut it into chop sized portions, so it cooks quicker.

I’ve also added 2x Capsicums, Carrots, Cabbage, Onions, Pumpkin and Chickpeas (1x can). I’ve fallen in love with Chickpeas.

I’ve added Fetta cheese over the things it will go with.
I’ve squeezed the juice of one of my home grown Lemons over everything. I’ve drizzled everything with caramelised Balsamic vinegar. My mum gave it to me, I didn’t check the use by date, it could be very old. I’ve dressed everything with Olive oil.

I’ll cook it in the oven on the grill setting, on high heat.
It will take around 35-45 mins to cook, I’ll have to watch it, the Capsicums might look caramelised.

I’m not sure if the crackling will crackle with all this moisture around it. (It did, it was amazing)

I grew the Queensland Blue Pumpkins, they are so orange yellow when you grow them yourself, it’s the best baking variety. The Cabbage is also home grown, it was so crunchy and full of juice.

The Rosemary is from my garden, my poor plant is struggling to keep up with me in winter, I can’t wait till spring when it takes off. Rosemary and Lemons are my lovers in winter.

I’ll serve this with Greek Yogurt and home grown Broccoli. My Broccoli is huge this year. It’s bigger than my head. I’ve left it late to pick, it’s about to flower!!!

(P.S I cut through the pork to make it cook inside. I turned it over too.)

Happy gardening
Tim
